My thumb rule is: if a place advertises a Mysore Masala Dosa, then it's not really a good dosa place. Case in point: sagar ratna in Delhi. (Good dosas in Delhi are to be found in Carnatic cafe) Also, this might be controversial -- there are two dosa schools, what I call the Chennai school and the Bangalore school. The former includes dosas that are larger in size but thinner. Sometimes they're flaky. Dosa in Bangalore is like Biryani in Hyderabad, it gets way too many hot and heavy opinions. So, careful of online 'foodies' communities. Also, the 'traditional' masala Dosa has been altered to suit modern economics more than anything else. Nowadays there is almost nil Urad dal in most commercially produced dosas and I'm sure you've heard of the ubiquitous use of baking soda to make the batter rise. Having said all that, if I wanted to get a masala Dosa in Bangalore, I would make the trek to Malleswaram and eat at CTR. If I'm in a hurry I will eat at Ganesh Darshan dosa camp in Jayanagar 3rd Block. My maximum outer radius would be to eat masala Dosa at MTR (which is decent but gets a lot of slack online for some reason ) or the Cheese Masala Dosa at Shanti Sagar in Koramangala near the BDA complex or Vidyarthi Bhavan in Gandhi Bazaar. Any other dosa is usually like a Pizza Corner pizza. You know it is a Pizza but are convinced it's not one. When I worked in Bombay for a bit about 15 years ago, the difference seemed to be that mysore masala dosa had mixed vegetables stuffing versus potato only in the regular dosa. For the latter, refer Venkat's mail. Easier – just where in Bangalore are you located? Going to CTR / Veena Stores in Malleswaram might be a tall order if you’re out in Whitefield or the Outer Ring Road. That said, there are dozens of little “99 varieties of dosa” places spread all over the city and you’ll get a tolerable masala dosa, certainly better than anything you’ll get in Bombay, at most any of them. With so much butter slathered on, you had better kiss your arteries goodbye, but that’s another story.
