To piggyback on what Ken says, if you have to do the interstitial spaces and if the top chord of the floor truss is >4”, per the listing of the interstitial sprinklers, you are not able to use CPVC piping. At least that is what I found with Viking and Tyco. I assume they are all similar.

It really depends on the project. For the basic wood frame 3-4 story project, I run mains and lines for the lower level and rise up in the walls for the top floor. That way can avoid dealing with an ungrateful attic. If you have to zone each floor, that changes
