Tom, I heated to 170f as you suggested. It became transluent and then congelled again, this time in three layers, a bottom layer (about 5%) that looks like black solids, then a layer of something white (also about 5%) and the rest brown goo. But it looks like no water. So chicken fat it is.

Luke, So chicken fat it is. Maybe. Did you use bottom heat? as in a pot on the stove? If so, did it crackle a bit? Any water on the bottom? If you used a submersible heater, did bubbles form around the heating element? The white stuff , about 5%, might be water.
