@psd moved on from Osmosoft some time ago (and is now one of the leading
lights of the gov.uk digital team). I can make the  changes, though, if you
could kindly point me at a corrected version of the tiddler?

The code example shows the variety of syntax for specifying slices.
However, the table that follows it is *not* a rendering example of
the code.  It is merely a plain table, used to summarize the values
that are defined by the code example above it.  The values shown in
that table are correct, and it is not intended to show any special
bold/italics/alignment formatting.  The only problem with the content
is that it caused you some mild confusion as to what you thought it
was supposed to present.  Perhaps a different format for the summary
table would help... maybe not using a table at all... something like
the following could work:
{{{
slicename=value
slicename=value
slicename=value
}}}
(i.e., using a PRE block with name=value literal text, so it clearly
doesn't look like wiki syntax to be parsed).
