Reset them to the defaults they where when you installed the server . If
you have not touched them good :)
Don't disable stuff unnecessarily FLAC=native should work fine , then
the Touch should play flac files fine.
For aiff and MP3 wav etc they have their own settings .

No a FLAC file is a Flac file nothing else .

Best is to leave it as it is :) don't fiddle around with server side
conversion and stuff, it's all configured to work right. Make sure
FLAC->native is enabled. Unless you are using an old slimp3 you won't
need anything else,

Can you help what are the meanings of the different settings in advanced
tab for file types.
For flac, these are the stream format and corresponding decoder setting
AIFF - DISABLED
- FLAC
FLAC - DISABLED
- NATIVE
MP3 - DISABLED
PCM - DISABLED
