indeed, reading your description it's not simple that those are missing
from the .deb but they are different project/sources so it would need
some work to include, ideally upstream libimobiledevice would ship them

cat /proc/`pidof totem`/io
reveals totem's biggest skip coincides with a disk _write_ of some sort.
That should be easy to track down but I'm just about out of time this
