So here's what actually worked. I changed
fsck /dev/mapper/ubuntu--vg-root
to
fsck /dev/mapper/trisquel--vg-root
And I got my system back.
It's not your fault for being a noob, a warning regarding this issue should
probably be added to the release-upgrade script. This situation doesn't
affect fresh installs but it probably happens to most people who were using
the standard desktop session with Trisquel 7.

Unetbootin has an option to make a persistent file. Skype is proprietary, so

In a few certain desktops the trisquel.info website is mostly inaccessible
somewhy, the room manager of these desktops knows nothing to Trisquel

it's not just you. I guess they are maintenance related outages.
