and once that was done the concern was resolved.

Please boot with '--verbose' added to the kernel boot options and attach
the resulting /var/log/syslog, so we can trace the resulting upstart
events.

grub2 doesn't have the concept of "Xen-only" kernels; instead, it offers
anything with CONFIG_XEN_DOM0=y on Xen *as well* if you have a Xen
hypervisor installed.
