This is fixed in the beta of LyX 1.5 that is in Debian experimental.
We'll hopefully have LyX 1.5 in Gutsy, so this will be fixed.

In fact I do not need to install language-env. It's enought with
localedef -i es_ES -f ISO-8859-1 es_ES

I have solved the problem.
aptitude install language-env
localedef -i es_ES -f ISO-8859-1 es_ES
At least in my case it works (running ubuntu edgy)
I suppose we can do something similar with other locales, but I don't
know...
