I have again the same problem after recent updates.

Generally it is not simple-scan issue. The isse do not exists in Ubuntu 21.04,
because the Sane "
"escl" backends were improved.

The second option for the scanner appears also in Ubuntu 20.04 after running
hp-doctor and so simple scan works also on Ubuntu 20.04.
BEFORE running hp-doctor I see the attached screenshot where if I click on the
small arrow near 'HP Deskjet..' I DO NOT SEE the second option.

Generally you have two scanner backends:

Note: problem is solved for simple-scan 3.38.1-1 available in Ubuntu
21.04 where i can select the other entry for the scanner but NOT for
simple-scan 3.36.3-0ubuntu0.20.04.0 distributed with Ubuntu 20.04 where
only 'HP DeskJet_2600_series' is available.

Sorry, in the 1st screen simple-scan proposed 'HP DeskJet_2600_series' an I
accepted this, if I change and select the other one simple-scan works fine.

Renamed directory, ./_install/bin/simple-scan --debug gives the same problem.
changed Paper Size and decrease DPI - same problem
but I select 'single page' but then in preferences i see 'multiple pages from
flatbed' it's correct?
see attached picture.
I also craeated a zip file from simple-scan
Please try to change Paper Size and decrease DPI in application
settings.
Try also rename /home/corrado/.cache/simple-scan directory.
