Hi,
can you post the new contents of /var/log/apt/term.log?
As well as the (censored) contents of /etc/postfix/main.cf. Depending
on those contents, I may need to see contents of other /etc/postfix/*
files.

I found a workaround regardless. I installed mdadm, ignored the postfix
error, then on restart after installing 10.04 I removed postfix (apt-get remove
--purge postfix) and reinstalled it (apt-get install postfix). No more errors.
But I still get...

It looks (from your DpkgTerminalLog.txt) like /dev/pts was not set
up inside your chroot. Can you enter the chroot and do
mount -t devpts devpts /dev/pts
chmod 666 /dev/pts/ptmx
mount --bind /dev/pts/ptmx /dev/ptmx

I had bound all of /dev/ already. I take it /dev/ptmx/ has to be
specifically bound, then?
I found a workaround regardless. I installed mdadm, ignored the postfix
error, then on restart after installing 10.04 I removed postfix (apt-get
remove --purge postfix) and reinstalled it (apt-get install
postfix exit status 75 usually means a configuration error. I'm closing this
report due to your last comment regarding you fixed your problem with a
reinstallation of postfix.
