Kevin,
In the Mail settings for the native mail app you can limit the preview so you
only know who it was from and the subject.
You can also set if newest messages are on top or not.
That may require that threading is on; not sure.
I do not find those settings in the Outlook app.
I think again,
To show individual messages .. under settings make sure “organize by thread” is
not checked ..
Not sure you can swap the order .. or the part of the message being displayed
.. I haven’t seen that anywhere ..
As for removing your account from the stock mail .. that shouldn’t have any
