I decided to call Apple Accessibility and got someone who was very helpful.
He had me go to Settings, General, Keyboards, One-handed keyboard and turn
it off. I guess this got turned on when I upgraded to iOS 14.8 the other
day. I really wish Apple would not automatically change

Just a shot in the dark here, I think it has something to do with how
the keys are arranged on the soft keyboard. If you go into settings,
keyboard, and double tap a button saying "Keyboards" and then a number.
For me it says "Keyboards, 2" because I have U.S. English and Emoji.

Let me say right from the start that I'm running iOS 14.8 and have not
upgraded to iOS 15. I'm not sure when I first noticed this on screen
keyboard change but since the only thing I've done recently is to upgrade to
iOS 14.8, I assume it is attributable to that.
