I had this very same problem under 15.1. I updated yesterday to the latest iOS
release and it seems to have fixed it.

to be honest with you I really don’t know what it means however right now as I
said it’s unprotected so that way I could see the email address that someone
emailed me from

Why not just turn on Airplane Mode and turn the volume down a bit so in case
you accidently press the side button and the phone speaks the time it's not so
others can hear it.

I find the easiest thing to do to silence one’s phone is to first flip the
switch to mute then do a 3 finger double tap to turn off voice over. I find
this much easier than changing a setting. When out of the meeting, simply do
another 3 finger double tap to turn v
flip the mute switch
to unmute.
