I think you are not seeing the edit button because you have a lot on todays
screen. I have the same issue both on my iPad and my iPhone.
Here how I was able to reach the edit button. On today’s screen I swiped up
with three fingers until

Your problem is that you are going into Edit mode in the search field and at
that point a 4-finger single tap on the bottonm half of the screen will take
you to the last element on the screen which

Then, check at the bottom again for a customize button.
Double tap on it.
