Unfortunately, I can't answer your question, but I do exactly what you do to close my apps, and I don't have the problem with the App Switcher automatically closing out from under me. Like I said, I know this doesn't answer your question, but maybe there's something going on with your phone

When I want to activate the App Switcher, I press the Home Button twice and then use the three finger swipe to close the apps that were running. For whatever reason, the App Switcher often turns off before I have finished closing all running apps so I need to reactivate the App Switcher to finish
