I had an answering machine program that used the modem in my pc. I think every modem at the time came with software like that. Winfax, bitfax, etc. I used it for a while and it used to save each message as a sound file, not sure mp3 or not. I would imagine there is still lots around that are still free. sure, asterisk on a linux router with voice ports.
