I've managed to answer my own question after looking at this a bit more.
Using the single package example as is:
http://wpkg.org/Java#Install_JRE_with_exe_and_msi_in_a_mixed_32-bit.2F64-bit_environment_in_one_package
I can just remove the XP related checks/install commands.

I'm puzzling over the best way to manage Java updates.
Looking at the example on the Wiki there appears to be several ways
engineered by people with mixed versions of Windows.
Our environment is purely Windows 7 x64.
