It probably does, but apparently not under XQuartz.

Graphics rendering should run a lot faster locally anyway, but have you tried 
running from the Mac to your Linux box?
It probably won't work either, but it might help understand if that message 
about OpenGL2 is accurate or some hardcoded remnant from the past.

Graphics: Intel Iris 1536 MB

I installed PyMOL via Homebrew and it runs without any problems!
My graphics card should support OpenGL 2.0 at least!
