write a a small script for filters that copies the spool file (FILE) into
one dir (or as it benefits your needs). - in xmail 1.14 use the .tab
filter, in =1.14 use filters.in.tab and

Close your eyes and have confidence.
Start using Xmail. It's very well suited for your situation.
Have same setup here altough the load is rather modest. (9 domains, 4 mail
servers, 700 mails/day)
