Depends on several things. For the most part, I've had no problems with upgrades and I've upgraded several 7.0 servers to 7.2. Confguration files should always be backed up but rpm is pretty good at saving the old file as <file>.rpmsave or the new one as <file>.rpmnew. However, upgrading -- say -- 7.0 to 7.2 with Raid 0 can be a little frightening.
