As preventative measures too, you could lock the mac addresses of switch
ports so that only certain network cards can access the network from each
port, and disable the com ports in your machines (physically and/or in the
bios) and padlock the covers of the computers. 

I believe also that some manufacturer provides physical locks specifically
for computer ports.  Don't have any details though.
