It depends, but generally speaking it is safer to put it into the DMZ. 
This assumes that the DMZ is protected by some kind of firewall, and the 
LAN is protected from the DMZ by some kind of firewall.  This will protect 
the internal network if the mail server is compromised.  However, having a 
mail proxy in the DMZ and the mail server on the internal network is even 
more secure.
