Chocolate Fondue (Diabetic)
Recipe courtesy of the NutraSweet Company.
1 package (8 ounces) unsweetened baking chocolate
1 cup skim milk
14 1/2 teaspoons Equal for Recipes or 48 packets Equal sweetener or 2
cups Equal Spoonful
1 teaspoon vanilla or 1/2 to 3/4 teaspoon rum extract
Dippers: apple and pear wedges, banana pieces, orange segments,
strawberries, and pretzels
Cut squares of chocolate into pieces; heat chocolate and milk in medium
saucepan over medium-low to low heat, whisking constantly, until
chocolate is almost melted.
Remove from heat; continue whisking until chocolate is melted and
mixture is shiny. Add Equal and vanilla or rum extract, whisking until
mixture is smooth.
Pour chocolate mixture into fondue pot or serving bowl; serve with
fruit and pretzels for dipping.
Makes 12 servings.
Nutrition information per serving (about 3 tablespoons): 123 cal., 3 g
pro., 10 g carbo., 10 g fat, 0 mg chol., 13 mg sodium.
Food Exchanges: 1/2 bread, 2 fat.
(With the fruit dippers, that looks like a pretty healthy snack and
would curb your choco-pangs.)

BTW...do you know how to make dipping chocolate? I saw that recipe all
over the place. It is made with cocoa and is intended to use with
other diabetic dessert recipes to dip and coat chocolate over the
