you are close to reaching your aim it seems: both servers talk to each other and send mails over.

now you should be able to see the mail on the target server either by checking the target account using a POP3-client or by looking into the filesystem: subdirectories of %JAMES_HOME%/apps/james/var/mail/inboxes/ represent the mail account(s) and should contain files ending with ".FileStreamStore" which you can open with a text editor.

The smtp server log shows spooling, 30 messages I attach it also.

This is from the log file "mailet"....there are 30 such messages everytime I 
send a piece of mail BUT the mail never gets to where it is addressed.
