Reason I am asking is that I am using James for testing and banging on it
from my application and I expect the emails to just sit in the outgoing
directory and never get sent as the email addresses I am providing are not
valid but I don't want to manually have to delete these files in the middle
of my test.

if you are not interest on sending messages ,you can comment RemoteDelivery mailet and you can replace it with a LogMessage mailet that simply log your message on logging file.

So your messages is not stored in outgoing repository.
