In addition to Bruno Lowagie package (http://www.lowagie.com/iText/) you
may want to try
Cocoon (http://xml.apache.org/cocoon/index.html) and FOP
(http://xml.apache.org/fop/index.html)
FOP is bundled with Cocoon distribution.

Cocoon is a servlet that takes a XML file and transforms this file in
whatever you want using XSL file.
