JBoss3/Jetty is by far the simplest open source setup I've dealt with
and take all of 30 seconds to install and setup.  Tomcat/JBoss/Apache
gives you too many pieces to worry about and juggle.

As far as commercial app servers Orion is by far the easiest to install
(just unzip), and probably the fastest app server out there.  It's not
expensive either, coming in at $1500.00 per server (not by processor or
platform).  OC4J (The Oracle version of Orion) is apparently free now,
and handles everything on the planet.
