I'm on OS X. I normally launch Shoes from Quicksilver (which is
equivalent to double-clicking its icon) and then immediately open a
.rb file. I've had some trouble running a few of the examples posted
here, and no trouble at all with others. (Unfortunately I've forgotten
which ones worked and which ones didn't.)

I'm not a real Apple dev, but I could probably do one thing very very
easily, which is just cook up a quick screencast where I download and
install Shoes Curious and run through each of the examples to see what
happens. That would make it easy for you to spot any obvious weirdness
in action. (I'm starting to believe that screencasts are a sine qua
non for tech support of any kind.)
