I'm on OS X. I normally launch Shoes from Quicksilver (which is equivalent to double-clicking its icon) and then immediately open a .rb file. I've had some trouble running a few of the examples posted here, and no trouble at all with others. (Unfortunately I've forgotten which ones worked and which ones didn't.) I'm not a real Apple dev, but I could probably do one thing very very easily, which is just cook up a quick screencast where I download and install Shoes Curious and run through each of the examples to see what happens. That would make it easy for you to spot any obvious weirdness in action.
