The way it's intended to work is that you click on the pencil icon at the right end of the field, then just start typing. However due to a bug (in e I think) this doesn't quite work. You need to tap the pencil icon when that field isn't selected, so when it's white rather than yellow. It will go yellow, and the pencil icon will change to a bin icon that will let you delete the field.
