you've checked out http://site/manual, right?  that's where the dox live
by default in any apache install (ie redhat's out-of-the-box).

for configuring apache, there's a front end that i have exactly 0 experience
with since i hate the web and have thankfully passed all my webmaster duties
on to someone-who-cares @ work, but it might be what you're looking for:
TkApache, should be available @
ftp://linux.ucs.indiana.edu/linux/redhat/contrib/libc6/i386/TkApache*
(if you want an rpm).
search on http://freshmeat.net for it (it was recently upgraded to v.12
if i recall correctly) to find a source download location.

btw, linux.ucs.indiana.edu is my favorite redhat mirror these days when
gatech is full.
