that's all about keeping the right level of spirituality. in theory, kashmiri brahmins don't eat onions and garlic, though they do eat mutton and chicken. how vegetarian is that? however this results (like many other ancient dietary constraints) in an innovative and delicious cuisine, with the use of saffron, asafoetida, powdered dry ginger and aniseed more than compensating for the lack of onions and garlic. mmmmmmm. -r
