Just recently I was having trouble recalling the word "scalded" with
respect to milk (I was making yoghurt.)

But I have a solution that works better for me than Evernote. I asked my
amanuensis.

"What's the term for heating up milk just below boiling?"
"Scald?"
"Thanks!"
"You're welcome."

Hm. Maybe I should try asking Siri. Or Google Voice...
