My concern about using higher amperage batteries is that,
if someone is careless, or sick (and not paying adequate attention
to what they are doing), or just has the bad luck of having
a silver bridge form in the solution, that shorting out
these batteries could cause an explosion of sorts.

Plastic leeches. Even foodsafe plastic (it just takes a lot longer).
Do we really want to be making CS in plastic buckets? (I'm assuming
plastic is the material.) My understanding is that you'll end up
with minor amounts of silver compounds that might be toxic. Now,
the amounts might be small enough to not matter, but why take
unnecessary chances? Use a glass jar.
