A current controlled generator will make ions at a constant rate in water that's conductive enough for it to pull the full current from the start. None that I know of use a timer for this as distilled water is, by far, preferable to get predictable results and just a small difference between batches of distilled makes for major differences in the time it takes to build up to that constant current.
 Sometimes hours.

Not current controlled aka constant current?
Forget it, with any water. NO way to time anything.
Get a meter.
Conductivity meter is best.
Next best is voltmeter if it's current controlled, start timing when voltage starts to drop, or just run to a given voltage difference......ammeter and current difference, if not.

Most constant current generators that use conductivity related "Auto Off" won't let you use bad water. They just turn off and you're stuck. Silverpuppy has an auto off bypass switch so you can use any water in a pinch. The NEW smartsilver, I believe, now uses a microprocessor to sample the water and add 20 uS to whatever it is. www.colloidaltech.com.
I don't know the parameters, like "How bad" the water can be.
Water that's "too good", just doesn't exist.
Fred was leaving the CS generator maker community with more voluminous [profitable] sales fields to pursue, but is in limited production mode now as a side endeavor. [Too smart to try and make a living making CS generators and still not lie a lot. A Good guy, smart enough to have other options available. ]

If you don't use pure water, what you make is anyones guess...but at least you can make "something".

Hi,

If I only had well water to work with, is there a CS machine out there that works on a timed sequence?

I know there are machines out there which work with distilled water but am interested in a CS machine that will purify, or work with just plain water. The water here is alkaline, which means more minerals in the water.

Thank you,

Jean
