As far as I know distilled is purer. Double distilled is even purer but de-ionised water goes through a resin exchange to remove the ions, other impurities eg organic can still get through. I agree with adding some minerals. Concentrace is very good for that too. Going back to the original question, it partly depends on how much water you will drink, a small distiller may take 8 hours to give you about 3 litres!
