My generator is a simple unit with a series resistor to limit the max 
current to a couple of milliamps. I routinely start it at bedtime and 
decant a quart of CS in the morning. I designed it that way to make it 
simple to operate.

If I forget and leave it for a few extra hours, it hardly matters. It 
just gets a bit stronger. It all works.

It sounds to me like you're doing very well! 

You might look at some method of stirring your gallon of water while 
brewing. You only need a very little movement, so something as simple 
as a night-light bulb sitting next to the bottom of the jar would set 
up ample convection currents. It might take even longer to finish, but 
the results will be pretty consistent.

So what if it takes 24 hours? You want more than a gallon a day? I can 
see how you might. Then you're talking about a different generator 
designed for the volume you need.
