I believe it works by completely digesting food so that no undigested protein 
crosses into the blood stream, which is the cause of a lot of allergies.  As 
around 80% of the immune system is in the gut I suppose this makes sense.  I 
have read that leaky gut syndrome is one of the major causes of allergies.  
Also proteolytic enzymes taken on an empty stomach go round the system 
digesting proteins which antigens have surrounded themselves with to fool the 
system into thinking they are 'normal'. dee
