Coconut oils have wonderful characteristics used for frying; And as far as I can tell, Coconut oil is superior with everything- popcorn to potatoes. To me coconut-oil is the very lightest of fry-oils; The benefits of its non-cholesterol structure have long been recognized by chefs around the world. IMO South-Asian cuisine cannot be successfully replicated without coconut oil *Coconut oils have characteristic odors, *which play a part in the "coconut cream" used in sauces and confectionery- *But Coconut oil does NOT impart this "coconut flavor" ** *to foods-- **no more than grape oils taste of Welch's Grape Juice... No more than butter tastes like blue cheese. ________________________________________ VEGAN BUTTER I believe the Coconut thread attracted a comment about vegan butter. Every chef and Hindu vegetarian knows- dairy butter has no substitute. I am the most depraved kind of butter addict. After years I found help for my disease: Tahini-Miso sauce Tahini has dairy richness; Miso is sweet and salty. *It works if you work it. * Recipe: 8 oz fresh tahini [about 1 cup] 1-to-2 Tablespoons miso, to taste 1-to-2 Cups best water Blend 1:1 by weight .water with Sweet White Miso, Add more water until it is same consistency as the tahini. Blend tahini and miso mix, adding water until it's a pourable sauce. NOTES Tahini "gels" when cooked or heated. so I make my VEGAN BUTTER watery when used for cooking In Berkeley I can get fresh, imported Chinese Tahini from made from roasted sesame. I use the sweetest miso you can find- "Hawaiian-style" white miso is ideal, but any shiro miso [ie white miso] works well.
