Hi Liz, I think that the pH of sauerkraut is more or less neutral, but apart from tasting great sauerkraut is a good source of enzymes, as is kim chi (I love this stuff), soy sauce (aged), Worcestershire sauce, fresh pineapple, papaya, raw onion, garlic, fresh herbs, raw carrot, fennel, beets, leeks and celery etc.
I think you should eat the cabbage to gain full benefit.
