The only way to take advantage of the probiotics that sauerkraut offers is
to eat it raw. Canned, by it's very nature, is heated thereby destroying it
probiotic properties. I don't know about the bagged kind. I've often
wondered. I wouldn't be surprised if it's been heated also but I honestly
don't know. The best way to make certain of what you're eating is to make
it yourself. I've never done it but from what I've read, it looks easy
enough.
