The longer you use the electrodes the thinner they get and the more they
get pitted.  The color change is due to less reflectivity of the metal
surface due to the pitting, a rough surface.  The pits have edges which
increase ion discharge surface area which in turn compensates for thinner
wire having less surface area..so the pitting is a good thing where keeping
current density constant is concerned.

Cleaning:  Just rinse them off or gently wipe off any powder.
It's all silver.
If you scrub them, you might be embedding impurities into the pits.
The reversing current constantly cleans the pits out.
Dipping the electrodes in hydrogen peroxide for a few minutes does really
well to get rid of black silver oxides, converting it back into [dusty]
silver, but reverse current converts those oxides back into silver ions
anyway.
