Give the pilots a panic button that throws the planes controls into 'fly by wire' mode via satellite uplink and video cameras. Nothing can be done in the airplane to change it's course in any way other than down by physically removing parts of the plane. Attempting to do that would probably piss off the passengers and crew sufficiently for them to take steps. Action takes place when hope for safety is gone.
