Dear Damian, Here's a good test - buy some chicken pieces and store them in the fridge and completely forget they are there for two weeks.
Take them out of the fridge and get a whiff of them - whiffy eh? Now pour some ordinary water in a bowl and add a slosh - tablespoon or so of CS. Soak the pieces in the liquid for a few minutes then remove them and try the smell test again. No stink!!! Cook them as normal - eat them - and you get no food poisoning. The first time I did that, I had a good drink of CS as well, and snuck some into Fred's tea as well - didn't want to knock him off just then. Now I routinely spray any fresh meat/fish/chicken or soak them for a few minutes if I am in doubt as to their age [or time in the fridge]. THAT'S A TEST! Works too.
