adding just my 2 cents. Kombucha mushroom tea will also balkanize one's body and is recommended in some of those books. The TWO main benefits of kombucha tea is
one) you probably can get one free or very cheaply form a neighbor and it only cost pennies to make yourself :)) and Two) for long term "shelf life" of your K-T you can add C-S. The C-S will kill off the friendly bacteria and yeasts but not the glunonic (spelling) acids that many health claims are associated with. Most of the store bought stuff contain alcohol which keeps the K-T clear and presentable and in this case work the same as C-S except one may achieve both the associated benefits of kombucha mushrooms and C-S. Please note that I produce kombucha (and C-I) commercially and do sell the stuff; but do a search online and you'll find tons of information on it and possibly a free source or post a note "kombucha wanted" at the local health food store. Information on "HOW TO" is free at my web store http://www.happyherbalist.com/kombucha.htm one of my customers who has been monitoring his pH and taking all the diets and coral calcium for a few months just bough a kombucha and I gave him a free sample of the kombucha extract and with 2 days he reported his pH went over 7 for the first time- he attributed it to the kombucha. I told him that was pretty quick results and was probably a combination. He also reported a "healing crisis" of fever and sweating "pretty severe" but experienced for only one day and everything is now fine. (note: he was not using C-S) hey if some one says a penny for your thoughts and you give them your 2 cents worth - where's that other penny go?
