Usually one drinks 4-8 ounces of the tea per day. Depending on how much one drinks one makes 1-2 gallons weekly, pretty easy once one is used to it. Cost wise its one gallon good water, one cup sugar, 5-7 tea bags (Lipton, Red Rose ...) and 8-12 ounces of the previous brewed tea.
Some folks concentrate the tea, some make extract (pressings from the "mushroom")The extract is easy to carry and take especially when traveling or for diabetics. Most books recommend to add alcohol - as a preservative (not needed as a preservative) !) However, if one wants to "preserve" it or stop the fermentation process then I have suggested adding C-S. Most of my "tests" have been on the kombucha end, seeing what percentages will prevent fermentation, taste and presentation. 20% C-S seems to work best for me. Now, I'm thinking that the kombucha mushroom may serve as a better vehicle for the C-S. (as compared to Gatorade, aloe vera ... In traditional Chinese medicine, other than the benefits of many nutrients (see below) vinegar (kombucha) serves to break stagnation and phlegm and to move blood and increase circulation. it warms and strengthens the body. (Fresh fermented Kombucha tea has beneficial nutrients as well. The second phase of kombucha (the part that interests coral calcium and cs) is that although kombucha tea is acidic with a pH of usually under 3.0. (This benefits the digestive process) when combined with the stomach juices becomes alkaline (see Acid and Alkaline by Herman Aihara) for those interested a sample of kombucha tea may contain: Much of this depends upon brewing time as well as sugar and tea contents; a average 4 ounce (120 ml) daily dose may average NO Sodium, NO Protein, and 8 grams of sugar and 8 grams carbohydrates. A longer brew time (14 days) reduces the sugar content and alcohol content considerably although the taste moves from sweet to sour. They also contain enzyme inhibitors of glucuronidase, heparinase, hyaluronidase, and monoamine oxidase.
