Glenda, Since heating water in the microwave is uncertain in terms of changing the molecules of the water, I put a 16 oz jar ( Mayonaise jar) of DS in a small saucepan and warm it at medium temp for about 10 minutes, to about 125 degrees on candy thermometer. It doesn't take much more time and doing this removes any doubt about what the microwave does to water. Nancy
