Hi Marshal,
I believe it works but in a roundabout way to reduce the acidity in the interstitial fluids. I think the path is somewhat like the baking soda neutralises some of the HCl and the body buffering system makes more HCl for the stomach from components in the interstial fluid and thus raising the pH. Eventually the interstial pH will more permanently as waste and acid products are eliminated.
