Just like many other beaurocratic stuff, it is complicated, with several
language rules, so that organic means one thing, certified organic means
another, the country source changes the rules, and with a variety of
labelling rules, that consumers need to know if they care.  It also changes
daily, so diligence is required, on an ongoing basis.  You might also be
consuming some toxic food additive that is made from organic stuff, but is
bad for you no matter what.  If you want to learn about it, the following
website is very good.  It used to be that eating organic meant eating
healthy, now with the big corporations wanting a part of the market, the
rules have been solidified, but it no longer means healthy.  The big
corporations have gotten the rules slackened as much as they humanly can,
and will continue to push their influence.
