You can use either: Ascorbic acid = C6H8O6 sodium ascrobate = NaC6H7O6 C6H8O6 + NaOH -> NaC6H7O6 + H2O C6H8O6 + NaHCO3 -> NaC6H7O6 + CO2 + H2O The bicarbonate is safer, and produces carbon dioxide and water as by products. The lye is of course very caustic, but produces nothing but water as a byproduct.
